Slushy

It's only April, right?

Cause this is happening:


And that looks like summer to me, not spring. I'm not complaining. 


Summer to me means margaritas, swimsuits on sale at target, eating lunch on the lawn, sleeping with the windows open, farmers markets, a perpetually panting cattle dog, and the smell of SPF 30.

So to embrace the spirit of the season, I bring you a refreshing beverage.

Watermelon Lemonade Slushy
2 servings


8 lemonade ice cubes
3 cups watermelon

A day in advance, pour your favorite lemonade in ice cube trays and freeze. Store in plastic bags all summer long.


Remove rind from watermelon.


Place ingredients in blender and let 'er rip.


Pour into a glass, garnish with a slice of watermelon, and relax!


The sweet lemonade adds all the sugar you will need, even if your watermelon is not super sweet. If you're feeling saucy, add a shot of tequila, rum, or vodka. Or you could add 1/2 c. of coconut water for a more tropical flavor and hydration power. This is a great refreshing treat and is very low calorie. Much better than a margarita or a 7-11 slushy. Not that I won't be consuming plenty of those this summer...

Sweet Tea

Oh, here we go.

The Roady's have found themselves with an unwanted bottle of Sweet Tea Vodka. And by "bottle", I mean handle. The stuff by itself is pretty ridiculously sweet, but the good thing is that it doesn't at ALL taste like vodka. Danger zone.

So here are three ways to consume an unwanted bottle of sweet tea vodka. Ya know, in case you ever find yourself in such a dangerous situation.

  • Arnold Palmer Jello Shots (recipe below)
  • Straight up, over lemonade rocks (umm... just make lemonade, then make ice cubes from the lemonade)
  • Mixed with lemonade (1:1 ratio for martini, 1 part vodka: 2 parts lemonade for a summery cocktail)


Arnold Palmer Jello Shots
30 servings

2 boxes lemon jello
2 cups boiling water
2 cups chilled sweet tea vodka

First of all, make some fridge space.
Find a plate or pan that will hold your shot cups in place. I used a baking sheet with a lip. 


Boil water (I just microwaved for 3 minutes)
Stir in jello and stir until dissolved


Add chilled vodka


Pour into cups. I got these fancy pants ones at Party City.


But you could also just line a pan with a single sheet of plastic wrap, set up jello in there, and then slice into "shot" cubes.


Let em set up in the fridge for 4+ hours, then enjoy! But not too much, k?


Lemonade rocks are another great way to enjoy the sweet tea vodka. You could also mix the vodka with brewed tea for a weaker cocktail. Some people use self control. I don't know those people.


And finally, the classic way to consume. Mix with lemonade! Such a wonderful summer cocktail!

Do You Cashew?

I don't know what it is about cashews that I love so much... their sweet, butteriness? Their ability to be coated in salty or sweet and still taste amazing? The face they look like little kidneys? No, that's not it. 




They're certainly not a low fat or low calorie food, but in the world of nuts they are a decent choice (behind pistachios and almonds). Like many nuts, cashews have a long list of health benefits. But really, I just care that they taste great. The health benefits are an added bonus.

Cashew Butter


2 cups roasted unsalted cashews
1/2 tsp salt
3-4 tbsp soy milk or liquid of choice

Place cashews in a food processor


Pulse until you have a coarse meal


Add salt and 2 tbsp of liquid to start, then add additional tablespoons of liquid as you see fit


When your cashew butter is the consistency you like, transfer to a fridge container


Then you have an excuse to eat celery!



The cashew butter should stay nice and fresh for about a week.

You can always flavor your cashew butter while it is in the food processor. Here are some tasty add in ideas:

  • Vanilla bean
  • Cocoa powder/chocolate chunks
  • Coconut flakes
  • Apple chunks and cinnamon
  • Cumin and chili powder 
  • Lemongrass and thai chili (like the TJ's tom yum cashews omg)


Cashew butter and jelly sandwiches here I come!
