Garlic Mashed Cauliflower

Apparently cauliflower is one of those vegetables that just does what you tell it to. That cauliflower crust pizza a couple weeks ago?  Bomb.dot.com

Cauliflower itself really doesn't have much flavor. At least I don't think so. I've seen it on a lot of menus recently with curry or roasted as a side dish. It picks up the flavor of whatever you put on it. When I was a kid my mom used to steam a head of cauliflower and top it with this mayo-cheese-mustard mixture which sounds absolutely terrible but was absolutely not. The last time I had this I was probably 7, so what I'm saying is that it was so good that I remember it 18 years later. That shouldn't be surprising... I did say "cheese".

Anyway, I've heard that cauliflower can be mashed just like potatoes and I had to be the judge myself. I had some red potatoes that needed to be used, so I'll be honest: I didn't go 100% cauliflower. Now, if you're craving mashed potatoes, I don't think this will cut it. However, if you want a creative vegetable side dish, then this is the ticket.

Garlic Mashed Cauliflower
Serves 8 hungry hippos


Ingredients

  • 1 head cauliflower, roughly chopped
  • 4 small red potatoes, roughly chopped
  • 2 tsp crushed garlic
  • 1 tsp mustard powder
  • 1/2 tsp onion powder
  • 1/2 c. greek yogurt
  • 2 tbsp earth balance or butter
  • 1/2 c. shredded cheese of choice
  • S&P to taste
Instructions
  • In a pot, cover potatoes and cauliflower with cold water


  • Boil until fork tender (you stab it, it falls off the fork)
  • Reserve 1 cup of starchy water
  • Strain potatoes/cauli
  • Replace into pot
  • Add remaining ingredients


  • Mash mash mash! 
  • Add starchy water to thin until you are happy with the consistency


  • You could also put all ingredients in a blender and puree for baby food.... i mean..... fancy food
You could take this recipe and go 100% cauli or 100% potato. The mash-ins were superb. Greek yogurt adds extra protein and tart flavor. The rest of the ingredients are just savory and cheesy enough without being super guilt-inducing (like cream cheese, full fat sour cream, etc).

Life's been super stressful recently. I've wayyy overbooked myself and it's go go go. On March's schedule, I am balancing class, internship, 3 vacations, and a project expo at school all while trying to exercise 4 times a week and blog at least 3 times. I'm really sucking on those last two...
So naturally, I don't have time to go grocery shopping and I reallllly don't have time to make anything from scratch. Luckily, you can usually make a meal out of what you have in the fridge and pantry as long as you get a little creative. I've made a salad like this before, but I decided to provide a template for this recipe since it is SO versatile.



Template Salad
 Six servings

Ingredients

  • 3 cups grain/noodle of choice 
    • white rice
    • brown rice
    • wild rice
    • bulgur
    • couscous
    • quinoa
    • orzo
    • mini pasta
    • wheatberries
  • 3 cups chopped fruit and/or veggies 
    • tomato
    • bell pepper
    • cucumber
    • carrot
    • zucchini
    • red onion
    • avocado
    • mango
    • kiwi
    • strawberry
    • grapes
  • 1/4 cup dressing (bottled or freshly made)
    • asian
    • greek
    • oil+vinegar
    • lime juice
    • EVOO
  • 1/4 c. chopped herbs (optional)
    • basil
    • cilantro
    • italian flat leaf parsley
    • dill
  • 1/2 c. cheese (optional)
    • crumbled feta
    • fresh mozzarella
    • extra sharp cheddar
    • goat cheese
  • If you want to make it a one dish meal, then add 2 cups of protein
    • grilled chicken
    • salad shrimp
    • crab
    • cubed steak
Instructions
  • Cook grain according to instructions, let cool.
  • Add other ingredients
  • Serve!
Easy!


I made mine with red onion, tomato, bell pepper, mango, cucumber, and avocado. I dressed it with hot chili oil, EVOO, seasoned rice wine vinegar, and lime juice. Amazing!


I also used Israeli Couscous, which is so yummy, you MUST try it.

Green Eggs and ... Salsa ...

I recently inherited a big bunch of cilantro and if you know me, you know I don't like to waste food. It was money, then it was food, so don't throw it out, or you are throwing away money. I'm stingy. 


Cilantro is cheap, I know, but someone went through the effort to grow it and cultivate it and throwing it away is just insulting to that kind farmer. So how do we use cilantro? Top tacos. Top a pizza. Top a salad. Top Top Top. But what if I want to use it another way?

Like... in eggs?


Okay!

So how about some cilantro eggs with cumin spiced tortilla crisps and a fresh salsa this morning?


Green Eggs and Salsa with Cumin Crisps
 for two, or one very hungry writer of this blog


Ingredients

  • Crisps
    • 1 corn tortilla
    • 1 tsp EVOO
    • pinch of sea salt
    • sprinkle of cumin
  • Green Eggs
    • 3 tbsp fresh cilantro
    • fresh cracked black pepper
    • 3/4 c. egg whites (in a carton) or 6 egg whites
    • 1/4 c. shredded cheddar
    • cooked chicken, ham, turkey, bacon, ground meat, or any other meaty filling you may like... or none if you like, whatevs.
  • Salsa
    • 1 clove garlic
    • 1/4 c. roughly chopped red onion
    • 1/2 c. heirloom cherry tomatoes
    • juice of 1 lime
    • 2 tbsp cilantro
Instructions
  • In a medium non-stick skillet, heat EVOO over med-high heat
  • Cut the corn tortilla into 1/8's
  • Spread tortilla triangles in pan evenly and let cook for 2-3 minutes on each side, or until brown and crispy
  • Remove from pan and immediately sprinkle with sea salt and cumin
  • Set aside, but leave pan on the stove and reduce heat to medium
  • In a blender, whip up egg whites, black pepper, and cilantro
  • Pour into hot pan
  • Cover and let the eggs cook for about 5 minutes, or until cooked through and bottom of eggs are brown and crispy
  • Top with meat and cheddar, replace lid, and remove from heat
  • In a clean blender or food processor, mince the garlic
  • Then add cilantro and red onion and pulse until finely chopped
  • Add cherry tomatoes and lime juice and pulse until chopped and incorporated
  • Top your omelette with greek yogurt (like sour cream!) and the fresh salsa
  • Serve the chips on the side  

Amazzzziinnnggggg!!! That fresh salsa is sweet and garlic-y and delicious and works perfectly with the herby eggs and melty cheese. And those cumin chips? Awesome. Great for any meal. You could leave them in the frying pan and pour the eggs over the chips for a migas-like dish. I like having something crunchy to scoop up my eggs with, so I put them on the side. Do as you wish.
